Sweet Potato Hummus Recipe. Packed with flavour this sweet potato hummus will convert any hummus hater into a fan.
Ingredients
1 ½ cups of cooked sweet potato- I like roasted but steamed works well too
1 can of chickpeas- drained and rinsed well Juice of 1 lemon 1 Tsp of ground cumin 1 Tsp smoked paprika 1-2 Tsp curry powder- depending on your taste preference 2 Tbsp tahini ¼ cup olive oil 1 Tsp salt Olive oil Dukkha- optional topping |

A crowd-pleasing nutritious dip- even hummus haters love this one!
Method
1. Add all ingredients into a food processor and blend until you reach your desired consistency, you can add some water to thin it out if needed.
2. Top your dip with a drizzle of olive oil and sprinkle across dukkha (if using). Serve with vegetable sticks, wholegrain crackers, or corn chips. Store in the fridge for up to 5 days- if it lasts that long |
